"Sacred Heart Diet" Soup

So, I discovered this "diet" online called the "Sacred Heart Diet." I'm not suggesting you do the diet, but I made the soup and I think it is DELISH! And it's super low calorie-- like 75 calories per cup (or less...) So, I thought I would share the recipe. :)

  • 1 or 2 cans of stewed tomatoes
  • 3 plus large green onions
  • 1 large can of beef broth (no fat)
  • 1 pkg. Lipton Soup mix (chicken noodle)
  • 1 bunch of celery
  • 2 cans green beans
  • 2 lbs. Carrots
  • 2 Green Peppers

Season with salt, pepper curry, parsley, if desired, or bouillon, hot or Worcestershire sauce-- I don't add any of this. Cut veggies in small to medium pieces. Cover with water. Boil fast for 10 minutes. Reduce to simmer and continue to cook until veggies are tender.Enjoy!!

Pistachio Salad

I love this salad!!

  • 1 can crushed pineapple (do not drain)
  • 1 pkg marshmellows
  • 1 12 oz. container Cool Whip
  • 1 pkg instant pistachio pudding (not prepared)
Super eazy instructions: Mix ingredients together. Serve. :)

Taco Soup

Taco Soup

1 lb. ground beef or turkey

1 onion, chopped

3 (15 ½ oz) cans of mild cooking chili beans; you would use while making chili ( I use 2 cans of pinto beans and 1 of black beans), undrained

1 (14 ½ oz)can corn, undrained

1 can diced tomato, undrained

1 can tomato sauce

1 pkg. taco seasoning

1 ½ c. water ( I like to use beef broth. Jose is allergic to tomatoes, so I don’t use them. I just increase my beef broth by a ½ cup)

Brown meat and onions in a large sauce pan( I use a stock pot), drain. Add all remaining ingredients in. Bring to a boil, let simmer on med-low for 5 mins. Stirring occasionally.

*I like to serve it with cheese on it, a spponful of sour cream and tortilla chips crushed on top.

Butternut Squash Soup

Butternut Squash Soup

1 butternut squash (2 lb)

2 TB Vegetable oil

1c. chopped onion

½ tsp. chopped garlic

½ c. thinly sliced carrots

½ tsp ground cumin (I find that to spicy for myself so I use ¼ instead)

½ tsp salt & ½ tsp pepper

3 c. chicken stock

¼ c. heavy cream (I will use a ½ c. because I don’t like my soup so thick. My friend has substituted the cream for coconut milk and she really likes it)

Cut squash into 1 “square cubes(don’t forget to take out the seeds). Chop onions and carrots also. In a large pot heat oil over med heat. Add onions and garlic and cook. Stirring until they are brown, for about 5 mins. Add carrots and cumin, salt and pepper. Cook for 1 min. and then add squash and chicken stock. Bring to a boil and simmer for 15- 20 mins.( stirring occasionally) or until the squash is tender. Remove from the heat. Puree soup until it is smooth. Put in serving bowl (or back in pot) and add cream. Serve and enjoy.

Split Pea Soup

If you have left over ham bone from the holidays here is one of my husband's favorite recipes!!

SPLIT PEA SOUP
  • 3 quarts water
  • 16 oz. package of split peas
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup chopped onions
  • 1 package fresh, sliced mushrooms
  • 3 teaspoons salt
  • 1/2 tsp pepper
  • 1 bay leaf for seasoning
  • 1 ham bone
Mix all together in pot. Bring to boil uncovered. After boiling uncovered, simmer for 2 hours uncovered until meat falls off bone. Remove bay leaf and bone- ENJOY!!!!
We did this in a crock pot this year so it could simmer while we were not home. It was perfect!!

Yummy chicken tacos

Remember when I posted my New Favorite Salad? Well, this super yummy salad mix can also be used as chicken tacos! We just wrap the mix into a tortilla, sprinkle some cheese and ALL the kiddos love it. Here's the recipe again:

* Chicken breasts (However many you want and yes, they can be frozen. I usually do 3 breasts for my family...)
* Bacon (Again, however much is your personal preference)
* Lettuce
* Kraft Cucumber Ranch Dressing
* Kraft Seven Seas Green Goddess Dressing (My new fave!!)

Place the chicken in a skillet on the stove. Top each tender with Cucumber ranch dressing and let cook.
I cook my bacon in the microwave, but you can cook it on the skillet too. Prepare the bacon the way you prefer.
Once the chicken and bacon are done, pat with paper towel. Cut the chicken into cubes and cut the bacon into chunks with kitchen shears. Mix the chicken, lettuce and bacon all together. Then I use the Green Goddess dressing. It is DIVINE with the warm chicken and bacon!! But if you aren't a fan of Green Goddess you can use your preference. The bacon is optional as well.

Crock pot Broccoli-Cheese soup

2 packages (16 oz) frozen chopped broccoli
2 cans cheddar soup
2 cans evaporated milk
1/4 cup dried minced onion
1/2 tsp salt
1/4 tsp pepper

Combine all ingredients in greased 4-6 qt slow cooker. Cover and cook on high 2-3 hours or low 4-5 hours. Tastes great as baked potato or rice topper. Or "souper" as just soup!

New Favorite Salad

I made up this salad while I was doing Atkins and then Sei perfected it!

* Chicken Tenders (However many you want and yes, they can be frozen. I usually do 2 tenders for my personal salad...)
* Bacon (Again, however much is your personal preference)
* Lettuce
* Kraft Cucumber Ranch Dressing
* Kraft Seven Seas Green Goddess Dressing (My new fave!!)

Rio Grande Turkey Salad

Yum - this fresh and fun combination of ingredients makes this Tex-Mex main dish salad recipe so delicious.

INGREDIENTS:

  • 2 cups ziti pasta
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1/4 cup mayonnaise
  • 2 Tbsp. milk
  • 2 cups cubed smoked turkey
  • 1/2 cup sliced olives
  • 1 cucumber, peeled, seeded, and chopped
  • 1/4 cup chopped cilantro
  • 1 cup grape tomatoes
  • 1 cup cubed Pepper Jack cheese

PREPARATION:

Cook pasta according to package directions. Meanwhile, in large bowl mix sour cream, salsa, mayonnaise and milk. When pasta is cooked, drain well and add to sour crea mixture. Stir in remaining ingredients and mix gently.

Cover and chill for 1 hour before serving.

Caribbean Chicken Salad

You can use whatever fruits look wonderful in the market in this easy salad recipe. Try peaches, plums or nectarines if the papayas and mangoes aren't available.

INGREDIENTS:

  • 1 lb. boneless, skinless chicken breasts, cut into 1/2" strips
  • 2 Tbsp. blackened seasoning blend
  • 1 Tbsp. vegetable oil
  • 5 cups mixed salad greens
  • 1 mango, peeled and sliced
  • 1 kiwifruit, peeled and sliced
  • 1/2 cup chopped red onion
  • 1 red bell pepper, chopped
  • 1 cup sliced strawberries
  • 1 cup fruity vinaigrette salad dressing

PREPARATION:

Place chicken in heavy duty zip lock plastic bag and sprinkle with seasoning blend. Seal bag and gently shake chicken to coat.

Heat oil in heavy nonstick skillet over medium high heat. Cook chicken in oil for 10-12 minutes until no longer pink in center, stirring constantly.

Summer Salad

Ingredients
  • 1 -6 -8 ounce package of craisins ( dried cranberries)
  • 1 - 3 ounce can of La Choy - Rice noodles ; not the chow mein noodles, these are very small and tender.
  • 1 small package fresh strawberries sliced (no sugar)
  • 1 large can mandarin oranges drained leave- whole
  • 1 - 12- 16 ounce can of pineapple tib-bits in its own juice drained
  • 1 head of lettuce ice berg washed and chopped in small to med size
  • 1 bottle of sweet 'n sour dressing ( marzetti dressing)
  • optional pecans chopped
Directions
  1. Place in bowl lettuce first then all fruit sprinkled all over lettuce then rice noodles and craisins and add sweet n sour dressing

Taco Soup

TACO SOUP

1 lb. ground beef
1 chopped med. onion
1 can Rotel
1 can whole corn
1 can hominy
3 cans pinto beans
1 pkg. taco seasoning mix
2 cans whole tomatoes (or tomato juice or 2 cans diced tomatoes)

Brown beef and onion. Drain and remove fat. Add the 6 cans of veggies w/juice (withhold some of Rotel if you don't want soup too spicy). Add seasoning and cut up tomatoes. (Adjust as you like, some do not like tomatoes, just juice, I prefer the tomatoes.) Simmer. Serve hot with cornbread or vegetable sticks, etc. Is really good with a dollop of sour cream and a handful of shredded cheese on top.

Also good if you have crunchy tortilla strips to put on top.

To make those just butter both sides of corn tortillas, cut into strips. Place on baking sheet and bake until crisp.
