Salsa Chicken

I have a great recipe the kids and hubby LOVE. We call it salsa chicken:

INGREDIENTS:
1lb chicken breasts
1 jar salsa – around 1 pint size (any kind, any type of spiciness)
1 bag grated cheddar cheese- 1lb or ½ lb (or Mexican cheese or whatever kind you like)
Instant rice (enough for 4 servings)

COOKING:
Cut up chicken into bite sized pieces. Brown until just cooked. Add ¾ jar of salsa. Simmer until completely cooked while cooking your rice. (For added flavor, cook rice in chicken broth or use chicken bouillon cube in water.) For extra flavor, add a drop more sauce to chicken after it’s cooked.

When chicken and rice are done, drain rice and put in large over-safe dish. Cover with layer of shredded cheese. Add chicken. Add another layer of shredded cheese. Bake for 5-10 minutes at low heat until cheese is melted.

This is great because you can use any type of cheese you like, any kind of salsa. You can also add the chicken broth plus cilantro, lime juice and tomatos to the rice, and you can use any kind of rice (try with wild brown rice – but I don’t recommend instant for this!)

I cook a similar recipe with fish. Pour a jar of salsa over 4 white fish filets. Sprinkle crushed up tortilla chips and a little bit of cheese over the fish. Cook at 350 for about 20-25 minutes. Yummy and quick!
