As I prepared this for a SuperBowl munchie yesterday (GO GIANTS), I realized what a great and easy meal it is for busy moms... and it's very kid friendly!
Taco Dip
1/2 lb lean ground beef
1 can black beans
1 can red beans
1 can pinto beans
1 can diced tomatoes
1 can whole kernel corn
1/2 packet taco seasoning mix
1 bag of Tostitos "scoops" tortilla chips
grated cheese
Brown meat and drain. Add all ingredients to meat (except the chips) and let simmer for 10 minutes. Be sure to drain the juices out of the beans and corn before you add them. Serve with the chips (scoops work the best!). Top with cheese.
As a sidenote-- my family are not big red meat eaters-- I've made this recipe with shredded chicken and ground turkey and both worked great! We also like things spicey around here, so I typically add crushed red pepper & some garlic salt.
As you can see your biggest effort here is browning the meat and opening up some cans. So easy and so good!
