I am a huge fan of Bajio's cilantro ranch dressing (on my flauta salad)! I found this copy-cat recipe that I can't wait to try for dinner! Looks low fat, right? LOL
Creamy Cilantro Salad Dressing
3 fresh tomatillos, cut into quarters
1 package Ranch Buttermilk Dressing mix
1 cup mayonnaise*
1/3 to 1/2 cup buttermilk
1 cup fresh cilantro
2 cloves crushed garlic
1/4 teaspoon crushed cayenne pepper
Combine all ingredients in a blender and refrigerate at least one hour.
*For a thicker dressing reduce mayonnaise to 1/2 cup and add 1/2 cup sour cream to mixture.

I always hear about Cafe Rio but have never eaten there. Next time I'm in Utah I'll have to give it a try.

I once had "real" recipe and made the mistake of never writing it down so I was fuzzy on the details and did a search...there are a lot of copycat recipes that are on the right track but not quite right, but yours is pretty much right, except there was a jalapeno and one lime (the juice) in it as well. Anyways thanks for refreshing my memory!
