This is one of my families favorites. (The hardest part for me is removing the chicken from the drumsticks)
10 drumsticks (remove skin)
4 small potatoes, cut into 1" cubes
1 tablespoon butter or margarine
2 cups cut up broccoli
1 can condensed cram of chicken/broccoli soup
2 medium carrots, thinly sliced
1/2 cup milk
In large skillet, over medium-high, melt butter or margarine. Brown chicken 3 minutes on each side. Pour off the fat.
Stir in soup, milk, pepper (whatever suits your fancy--I don't think it needs any salt, but use it if you feel it needs it) and potatoes. Bring to a boil. Reduce heat to low. Cover, simmer 15 minutes.
Add broccoli and carrots. Cover, simmer 20-30 minutes longer or until chicken is no longer pink and vegetables are tender, stirring occasionally. Makes 4 servings.
(I also use thighs (because--which my guys really like because they don't always want to work so hard for their dinner. Getting the chicken off with a knife and fork can be tough, and it's too messy to pick it up with your fingers.)
